Ingredients
For the dough:
- 2 cups all-purpose flour
- 2 large eggs
- 1/2 cup water
- 1/2 teaspoon salt
For the filling:
- 1 pound ground chicken
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- Salt and pepper to taste

Steps
- In a large mixing bowl, combine the flour, eggs, water, and salt. Mix until the dough comes together. Knead the dough for a few minutes until it is smooth and elastic. Cover the dough with a clean cloth and let it rest for about 15-20 minutes.
- Meanwhile, prepare the filling. In another bowl, mix together the ground chicken, finely chopped onion, minced garlic, salt, and pepper. Ensure the filling is well combined.
- On a lightly floured surface, roll out the dough to about 1/8 inch thickness. Using a round cookie cutter or a glass, cut out circles from the rolled-out dough.
- Place a small amount of the chicken filling in the center of each dough circle. Fold the dough over the filling to create a half-moon shape. Pinch the edges together to seal the pelmeni.
- Bring a large pot of salted water to a boil. Drop the pelmeni into the boiling water and cook for about 8-10 minutes, or until they float to the surface and the chicken filling is cooked through.
- Using a slotted spoon, remove the cooked pelmeni from the pot and serve hot.
Russian chicken pelmeni are typically served with sour cream, melted butter, or a mixture of both. You can also garnish them with chopped fresh herbs, such as dill or parsley, if desired.
