Steps

  1. In a saucepan, pour the heavy cream and add the granulated sugar. Heat over medium heat, stirring occasionally until the sugar dissolves. Do not bring it to a boil.
  2. Remove the saucepan from heat and stir in the vanilla extract. Set it aside to cool slightly.
  3. In a separate small bowl, sprinkle the powdered gelatin over the cold water and let it sit for a few minutes to bloom.
  4. Once the gelatin has bloomed, place the bowl in the microwave or heat it gently over a double boiler until the gelatin is completely dissolved and the mixture is clear.
  5. Pour the dissolved gelatin mixture into the warm cream mixture and stir well to combine.
  6. Divide the panna cotta mixture evenly among individual serving glasses or ramekins.
  7. Allow the panna cotta to cool to room temperature, then cover each glass with plastic wrap or lids and refrigerate for at least 4 hours or overnight until set.
  8. When ready to serve, you can garnish the panna cotta with fresh berries or a fruit compote of your choice.
