Steps
- In a pot, bring the chicken or vegetable broth to a simmer over medium heat.
- In a small bowl, whisk together the miso paste, soy sauce, sesame oil, minced garlic, and grated ginger until well combined.
- Add the miso mixture to the simmering broth, stirring until the miso is fully dissolved. Continue to simmer for a few minutes to allow the flavors to meld together.
- Meanwhile, cook the ramen noodles according to the package instructions. Drain and set aside.
- In a separate pan, sauté the sliced mushrooms in a bit of oil until they are tender and slightly browned.
- Add the sliced bok choy or spinach to the simmering broth and cook until wilted.
- Divide the cooked ramen noodles among serving bowls. Ladle the miso broth with the bok choy or spinach over the noodles.
- Top the bowls with sautéed mushrooms, sliced green onions, and any other desired toppings such as sliced tofu, soft-boiled egg, nori seaweed, or sesame seeds.
