  • 4 cups chicken or vegetable broth
  • 2 tablespoons miso paste
  • 2 teaspoons soy sauce
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 4 ounces ramen noodles
  • 1 cup sliced mushrooms
  • 1 cup sliced bok choy or spinach
  • 1/2 cup sliced green onions
  • Optional toppings: sliced tofu, soft-boiled egg, nori seaweed, sesame seeds

Steps

  1. In a pot, bring the chicken or vegetable broth to a simmer over medium heat.
  2. In a small bowl, whisk together the miso paste, soy sauce, sesame oil, minced garlic, and grated ginger until well combined.
  3. Add the miso mixture to the simmering broth, stirring until the miso is fully dissolved. Continue to simmer for a few minutes to allow the flavors to meld together.
  4. Meanwhile, cook the ramen noodles according to the package instructions. Drain and set aside.
  5. In a separate pan, sauté the sliced mushrooms in a bit of oil until they are tender and slightly browned.
  6. Add the sliced bok choy or spinach to the simmering broth and cook until wilted.
  7. Divide the cooked ramen noodles among serving bowls. Ladle the miso broth with the bok choy or spinach over the noodles.
  8. Top the bowls with sautéed mushrooms, sliced green onions, and any other desired toppings such as sliced tofu, soft-boiled egg, nori seaweed, or sesame seeds.
