  • 8 ounces whole wheat or gluten-free pasta
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach leaves
  • 1/4 cup chopped fresh basil
  • Juice of 1 lemon
  • Salt and black pepper to taste
  • Optional: grated Parmesan cheese for garnish

Steps

  1. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the shrimp to the skillet and cook for 2-3 minutes per side until they turn pink and opaque. Remove the cooked shrimp from the skillet and set aside.
  4. In the same skillet, add the halved cherry tomatoes and cook for 2-3 minutes until they start to soften.
  5. Add the fresh spinach leaves to the skillet and cook until they wilt, approximately 2-3 minutes.
  6. Return the cooked shrimp to the skillet and add the chopped fresh basil. Squeeze the lemon juice over the mixture. Season with salt and black pepper to taste. Toss everything together to combine.
  7. Add the cooked pasta to the skillet and toss until it is well coated with the shrimp and vegetable mixture.
  8. Serve the healthy shrimp pasta hot. Optionally, garnish with grated Parmesan cheese for added flavor.
